Blueberry Yogurt Mixture

Instructions

  1. Prepare the Blueberry Yogurt Mixture: Begin by lining a baking sheet with parchment paper to prevent sticking. In a medium bowl, mix together the fresh blueberries, chopped walnuts, and vanilla Greek yogurt until the mixture is well combined. This mixture forms the base of your clusters.
  2. Form and Freeze the Clusters: Using a spoon, scoop approximately 2 tablespoons of the blueberry yogurt mixture to form individual clusters. Place each cluster onto the prepared baking sheet, leaving some space between each one. Transfer the baking sheet to your freezer and allow the clusters to freeze for 1 to 1.5 hours, or until they are firm.
  3. Melt the Chocolate Coating: About 10 minutes before the clusters are done freezing, melt the dark chocolate chips and coconut oil together. Place them in a microwave-safe bowl and heat in 30-second increments, stirring between each interval until the chocolate is fully melted and smooth. Let the melted chocolate cool for about 5 minutes to ensure it’s not too hot for coating.
  4. Coat the Clusters with Chocolate: Once the yogurt clusters are firm, remove them from the freezer. Using two forks, carefully dip each frozen cluster into the melted chocolate, fully coating it. Place the coated clusters back onto the parchment-lined baking sheet. If desired, sprinkle each cluster with a bit of flaky sea salt to enhance the flavors.
  5. Set the Chocolate and Store: After coating all the clusters, return them to the freezer or refrigerate for an additional 10 minutes to allow the chocolate shell to harden. Once set, enjoy the clusters immediately. Store any leftovers in an airtight container in the refrigerator for up to one week. They can also be stored in the freezer, but the yogurt will become very hard and will need to be thawed before eating.
