Dressing
- 1/4 cup peanut butter
- 1/4 cup low-sodium soy sauce
- 2 Tbsp brown sugar or honey
- 2 Tbsp rice wine vinegar
- 1/2 Tbsp minced garlic
- 1/2 Tbsp minced ginger
- 1 tsp sriracha sauce
- 1–2 Tbsp water (optional)
Wraps
- 2 chicken breasts, cooked and chopped
- 3 cups coleslaw mix
- 1/2 cup grated carrot (optional)
- 1/4 cup chopped cilantro
- 1/4 cup roasted, salted peanuts
- 4–6 tortillas
- Prepare the Peanut Dressing: In a small bowl or liquid measuring cup, whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, minced ginger, and sriracha sauce. If the dressing is too thick, thin with 1 to 2 tablespoons of water until desired consistency is reached.
- Mix Wrap Filling: In a large mixing bowl, combine cooked and chopped chicken breasts, coleslaw mix, grated carrot (if using), chopped cilantro, and roasted salted peanuts. Drizzle the prepared peanut dressing over the mixture and toss well to coat evenly. Allow the mixture to sit for a few minutes so the flavors can meld.
- Warm Tortillas: Heat tortillas in the microwave for about 30 seconds until they are soft and pliable, making them easier to roll without cracking.
- Assemble Wraps: Divide the peanut chicken mixture evenly among the warmed tortillas. Roll each tortilla tightly around the filling to form wraps.
- Serve: Serve the wraps immediately for best freshness and flavor. Enjoy as a quick lunch, dinner, or portable meal option.
Notes
- If you prefer a spicier kick, increase the amount of sriracha sauce to taste.
- For a gluten-free version, use gluten-free tortillas and tamari instead of soy sauce.
- Use honey instead of brown sugar for a natural sweetener option.
- Chicken can be grilled, roasted, or shredded for variations in texture and flavor.
- Leftover filling can be stored in the refrigerator for up to two days but assemble wraps fresh to avoid sogginess.
