This refreshing Strawberry Coleslaw combines the crunch of angel hair coleslaw mix with the sweetness of fresh strawberries and a tangy lemon yogurt dressing. Enhanced with raisins and sliced almonds, it offers a delightful blend of flavors and textures perfect for summer gatherings or as a vibrant side dish.

Ingredients

Scale

Slaw Mix

  • 10 oz Bag Angel Hair Coleslaw
  • 1/2 cup sliced almonds
  • 1/2 cup raisins
  • 2 cups diced strawberries (16 oz package)

Dressing

  • 2 (6 oz) Lemon Burst Yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Combine Slaw Mix: In a large mixing bowl, combine the angel hair coleslaw mix, raisins, and sliced almonds thoroughly to evenly distribute the ingredients.
  2. Prepare Dressing: In a medium-sized bowl, whisk together the lemon burst yogurt, mayonnaise, fresh lemon juice, salt, and black pepper until smooth and well combined.
  3. Mix Dressing with Slaw: Pour the prepared dressing over the slaw mixture and toss everything together until the coleslaw mix is completely coated with the dressing.
  4. Chill: Cover the bowl with plastic wrap or a lid and refrigerate the coleslaw for at least one hour to allow flavors to meld and to chill the salad thoroughly.
  5. Add Strawberries Before Serving: Right before serving, gently fold in the diced fresh strawberries to keep them firm and prevent the mixture from becoming soggy or turning pink from the strawberry juices.

Notes

  • Adding strawberries just before serving keeps the coleslaw fresh and prevents the color from bleeding into the slaw.
  • Chilling the coleslaw allows the flavors to develop fully.
  • For a nuttier flavor, toast the sliced almonds lightly before adding.
  • This coleslaw pairs well with grilled dishes and picnic meals.
