  • 3 tablespoons unflavored pea protein or pea protein blend (19g)
  • 1 tablespoon whole husk psyllium (7g)
  • 1/2 cup fresh spinach (15g)
  • Dashes of garlic powder (optional)
  • Dashes of onion powder (optional)

For Cooking

  • Coconut oil or non-stick spray (for griddle)

Instructions

  1. Preheat the griddle: Heat your griddle over a low-medium flame and lightly grease it with coconut oil or non-stick spray to prevent sticking.
  2. Blend the batter: Combine the egg whites, pea protein, psyllium husk, fresh spinach, and optional garlic and onion powders in a blender. Blend until the mixture is smooth and well combined.
  3. Cook the first wrap: Once the griddle is hot enough (test by sprinkling a few drops of water; they should sizzle), pour half the batter onto the griddle and quickly spread it thin using the back of a spoon to form an even layer.
  4. Flip the wrap: After about 2 minutes or once the underside is cooked and firm, gently flip the wrap and cook the other side for another 1-2 minutes until fully set and lightly golden.
  5. Make the second wrap: Repeat the process with the remaining batter to make a second wrap.
  6. Serve and store: Enjoy immediately or store the wraps in the refrigerator for up to several days. They can be used as a nutritious base for your favorite fillings.
