Instructions

  1. Boil the eggs: Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat. Once boiling, cover the pan, remove it from heat, and let the eggs sit undisturbed for 10-12 minutes to cook through.
  2. Cool and peel eggs: Transfer the cooked eggs to an ice bath and let them cool for 5 minutes. This stops the cooking process and makes peeling easier. Once cooled, gently peel the eggs and slice them in half lengthwise.
  3. Prepare yolk mixture: Carefully remove the yolks from the egg halves and place them in a bowl. Mash the yolks with a fork until smooth and crumb-free.
  4. Mix the filling: Add mayonnaise, Dijon mustard, sweet and spicy pepper jelly, apple cider vinegar, salt, and freshly ground black pepper to the mashed yolks. Mix thoroughly until creamy and well combined.
  5. Fill egg whites: Spoon or pipe the yolk mixture back into the hollowed egg white halves evenly and neatly.
  6. Garnish and serve: Optionally, add a small dab of extra pepper jelly on top of each deviled egg, sprinkle with a pinch of smoked paprika, and garnish with finely chopped fresh chives or green onions for added flavor and presentation. Serve immediately or chill until ready to serve.
