Base
- ¾ cup full-fat sour cream
- ¼ cup mayonnaise
- ¼ cup water
Flavorings
- 4 teaspoons fresh lime juice
- 2 teaspoons chipotle chili powder (or 1 tablespoon ancho chili powder)
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- 1 tablespoon minced garlic (approximately 2 large cloves)
- ½ teaspoon salt (plus more to taste)
- Freshly cracked black pepper, to taste
- 2 tablespoons fresh cilantro leaves (or 1 tablespoon chopped fresh cilantro)
- Combine Ingredients: Add ¾ cup full-fat sour cream, ¼ cup mayonnaise, ¼ cup water, 4 teaspoons fresh lime juice, 2 teaspoons chipotle chili powder, 1 teaspoon smoked paprika, ½ teaspoon cumin, 1 tablespoon minced garlic, ½ teaspoon salt, freshly cracked black pepper, and 2 tablespoons fresh cilantro leaves to a blender.
- Blend Smooth: Blend the ingredients until the mixture is completely smooth. Pause the blender occasionally and scrape down the sides with a silicone spatula as needed to ensure all ingredients are fully incorporated.
- Store and Serve: Once smooth, transfer the dressing to an airtight container. Serve immediately or refrigerate until ready to serve. The flavors will deepen if refrigerated for a few hours.
Notes
- For a milder heat, use 1 tablespoon ancho chili powder instead of chipotle chili powder.
- Chopped fresh cilantro can be used if fresh leaves are unavailable, but leaves provide a brighter flavor.
- Adjust water quantity to reach desired dressing consistency.
- This dressing can be stored in the refrigerator for up to 5 days.
- Use full-fat dairy for creaminess; low-fat substitutes may alter texture.
