Beef and Marinade
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 cup red wine (Burgundy or Pinot Noir)
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
Vegetables
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups mushrooms, quartered
Other
- 2 tbsp olive oil
- Fresh parsley, for garnish
- Brown the Beef: In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and brown them on all sides to lock in the flavor. Once browned, transfer the beef to the slow cooker.
- Sauté Aromatics: In the same skillet, add chopped onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes. Then, add these to the slow cooker with the beef.
- Add Vegetables and Liquids: To the slow cooker, add sliced carrots, quartered mushrooms, red wine, beef broth, tomato paste, dried thyme, bay leaf, salt, and pepper. Stir gently to combine all ingredients well.
- Cook the Stew: Cover the slow cooker and cook on low for 8 hours or on high for 4 hours. The beef should be tender and the flavors fully melded.
- Finish and Serve: Remove the bay leaf before serving. Garnish with fresh parsley. This dish pairs wonderfully with crusty bread or creamy mashed potatoes.
Notes
- For the best flavor, use a good quality Burgundy or Pinot Noir red wine.
- Make sure to brown the beef well to develop deep flavors.
- If you prefer thicker sauce, you can thicken the stew by stirring in a slurry of cornstarch and water during the last 30 minutes of cooking.
- Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
- Feel free to add pearl onions or bacon for a more traditional Bourguignon.
