  • Salt and pepper, to taste

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups mushrooms, quartered

Instructions

  1. Brown the Beef: In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and brown them on all sides to lock in the flavor. Once browned, transfer the beef to the slow cooker.
  2. Sauté Aromatics: In the same skillet, add chopped onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes. Then, add these to the slow cooker with the beef.
  3. Add Vegetables and Liquids: To the slow cooker, add sliced carrots, quartered mushrooms, red wine, beef broth, tomato paste, dried thyme, bay leaf, salt, and pepper. Stir gently to combine all ingredients well.
  4. Cook the Stew: Cover the slow cooker and cook on low for 8 hours or on high for 4 hours. The beef should be tender and the flavors fully melded.
  5. Finish and Serve: Remove the bay leaf before serving. Garnish with fresh parsley. This dish pairs wonderfully with crusty bread or creamy mashed potatoes.
