  • 3 tbsp extra virgin olive oil (or other neutral oil)
  • 1/2 tsp Dijon mustard (or other non-spicy smooth mustard)

  • 1/2 tsp pepper
  • 1/21 small garlic clove, pressed through crusher or smashed
  • 1 tsp lemon zest
  • 1/4 tsp sugar
  • 1 tsp honey
  • Finely chopped fresh herbs (to taste)
  • 1/2 tsp dried herbs
  • Pinch of red pepper flakes

Instructions

  1. Combine Ingredients: Place all dressing ingredients including optional flavourings such as fresh and dried herbs and red pepper flakes into a jar.
  2. Shake Well: Close the jar tightly and shake vigorously until the mustard dissolves and the mixture is emulsified into a smooth dressing.
  3. Serve: Use the dressing to lightly coat a big leafy salad for 4 people or a garden salad. Ensure salad leaves are dry for optimal adhesion.
  4. Storage: Store the dressing in the refrigerator for up to several weeks, excluding garlic and fresh herbs which are best added fresh. Before each use, give the jar a good shake.
  5. Use Suggestions: Drizzle over fresh salads or pour over steamed, boiled, or roasted vegetables while still hot to let the flavors infuse. Toss well just before serving for best results.
