  • 1 bag (10 ounces) mini marshmallows
  • ¼ cup (31 g) confectioners’ sugar

Instructions

  1. Add Chex to bowl: Place the Rice Chex cereal in a large mixing bowl and set aside to prepare the coating mixture.
  2. Microwave chocolate mixture: In a separate microwave-safe bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and unsalted butter. Microwave in 30-second intervals, stirring between each until everything is melted and smooth.
  3. Add marshmallows and melt: Stir in the mini marshmallows into the melted chocolate-peanut butter mixture. Return the bowl to the microwave and heat again in 30-second intervals, stirring until the marshmallows begin to puff and melt, creating a thick, creamy mixture.
  4. Combine mixture with cereal: Pour the warm marshmallow-chocolate mixture over the Rice Chex cereal. Stir thoroughly to generously coat all of the cereal pieces.
  5. Press mixture into pan and refrigerate: Transfer the coated cereal mixture into a greased 9×13 inch baking dish. Press firmly to compact evenly. Place the pan in the refrigerator to chill for 10-15 minutes to set.
  6. Coat with confectioners’ sugar and serve: After chilling, lightly dust the top of the bars with the confectioners’ sugar. Cut into bars and serve immediately or store chilled.
