4.6 from 52 reviews

A comforting and savory breakfast casserole featuring mini sausages wrapped in crescent roll dough, baked with a cheesy egg custard. Perfect for a hearty morning meal or brunch.

Ingredients

Scale

Crescent Rolls

  • 1 (8-count) tube refrigerated crescent rolls
  • 1 (4-count) tube refrigerated crescent rolls

Sausage and Cheese

  • 1 (14-oz) package Lit’l Smokies
  • 2 cups shredded cheddar cheese
  • ¼ cup dijon mustard

Egg Mixture

  • 5 eggs
  • 1½ cups milk
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven and Prepare Pan. Preheat your oven to 375ºF (190ºC). Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Prepare Crescent Roll Triangles. Unroll both cans of crescent rolls and separate the dough into 12 triangles total. Spread about a heaping teaspoon of Dijon mustard evenly over each triangle. Then, cut each triangle lengthwise into 3 narrow triangles to better wrap each sausage.
  3. Wrap Sausages. Place one Lit’l Smokies sausage on the wide side of each narrow crescent dough triangle. Roll the dough around the sausage tightly and place each wrapped sausage seam-side down in the prepared baking pan.
  4. Add Cheese Topping. Evenly sprinkle the shredded cheddar cheese over the arranged pigs in a blanket to create a cheesy layer.
  5. Mix Egg Custard and Pour. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Pour this egg mixture evenly over the pigs in a blanket and cheese in the pan.
  6. Bake the Casserole. Place the baking pan in the preheated oven and bake for 30 to 40 minutes, or until the egg mixture is fully set and the top is lightly golden.

Notes

  • Ensure to cut the crescent roll triangles thin enough to adequately wrap around each mini sausage.
  • Feel free to substitute the Dijon mustard with spicy brown mustard for a bit of extra kick.
  • Use whole or 2% milk depending on your preference for creaminess.
  • This casserole can be assembled the night before and refrigerated; bake in the morning for a fresh dish.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated.
