Ingredients

Scale

Wet Ingredients

  • 1 large egg
  • 4 tablespoons sugar
  • 1 cup coconut milk
  • 1 teaspoon coconut pandan extract
  • 1/4 cup unsalted butter, melted

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon cornstarch

Instructions

  1. Mix the wet ingredients: In a medium-sized bowl, whisk together the egg and sugar until the mixture is smooth and pale. Gradually add the melted butter, coconut pandan extract, and coconut milk, whisking to combine thoroughly.
  2. Sift and combine dry ingredients: Sift the flour, baking powder, and cornstarch into the wet mixture, and gently fold it in until the batter is smooth and free of lumps.
  3. Preheat the waffle iron: Turn on your waffle iron and lightly spray both sides with non-stick cooking spray. Wait for the indicator light to turn green to ensure it’s properly heated.
  4. Cook the waffles: Pour 1/2 cup of batter onto the center of the waffle iron. Close the lid and press for about 5 minutes, or until the waffle is golden brown and cooked through.
  5. Serve and enjoy: Remove the waffle carefully and serve warm, plain or with your favorite toppings such as syrup, fresh fruit, or coconut cream.

Notes

  • Ensure the waffle iron is fully preheated for the best crispy texture.
  • Use coconut pandan extract for authentic flavor; adjust quantity according to taste.
  • Do not overmix the batter to avoid tough waffles.
  • These waffles can be frozen and reheated in a toaster for quick breakfasts.
