Instructions

  1. Prepare Oven and Apples: Place rack in the center of the oven and preheat to 375 degrees F. Coat a 9″ x 13″ baking dish with cooking spray and set aside. Toss diced apples with lemon juice in a medium bowl to prevent browning; set aside.
  2. Make Oat Flour and Combine Dry Ingredients: Pulse the oats in a food processor or blender until they resemble coarse cornmeal. Sift together flour, baking soda, and cinnamon into a small bowl. Add oat flour and stir to combine; set aside.
  3. Cream Butter and Sugar: In a large bowl or stand mixer, beat butter and granulated sugar for about 4 minutes until light and fluffy. Scrape down bowl sides, then add vanilla extract and salt. Beat in eggs one at a time, fully incorporating each before adding the next.
  4. Combine Batter: Add half of the dry ingredients to the wet ingredients and stir to combine. Add apple juice and mix thoroughly. Stir in remaining dry ingredients until just combined. Fold in diced apples and half of the chopped pecans until distributed evenly.
  5. Bake: Transfer batter to the prepared baking dish and evenly sprinkle the remaining pecans on top. Bake for 25–30 minutes until golden and a toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely.
  6. Prepare and Add Glaze: While the bake cools, whisk powdered sugar and milk together until smooth. Drizzle glaze over the cooled breakfast bake, slice into portions, and serve.
