  • 1 cup dried chickpeas (or 2 cups canned chickpeas, drained and rinsed)
  • 2 cups diced tomatoes (fresh or canned)
  • 1 medium onion, finely chopped
  • 3 cups vegetable broth or water
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cinnamon
  • ½ teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the chickpeas: If using dried chickpeas, soak them overnight in plenty of water. Drain and rinse before cooking. If using canned chickpeas, rinse well under cold water and drain.
  2. Sauté onions and garlic: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook for 5–7 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.
  3. Add spices: Stir in cumin, coriander, turmeric, cinnamon, and smoked paprika, allowing the spices to toast slightly in the oil for about 1 minute to release their flavors.
  4. Add tomatoes and chickpeas: Pour in the diced tomatoes and add the chickpeas to the pot. Stir to combine all ingredients well.
  5. Simmer the soup: Add the vegetable broth or water, season with salt and black pepper to taste. Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer gently for about 45 minutes if using dried chickpeas (or 20 minutes if canned) until chickpeas are tender and flavors meld together.
  6. Adjust seasoning and serve: Taste the soup and adjust salt and spices as needed. Serve warm, garnished with freshly chopped cilantro or parsley for added freshness.

  • For a creamier texture, you can blend a portion of the soup before serving.
  • If using dried chickpeas, cooking time will increase; using canned chickpeas saves time.
