Instructions

  1. Prepare the Chia Pudding: In a measuring jug, combine 350 ml of coconut milk, 1 ½ tablespoons of maple syrup, and ½ teaspoon of vanilla extract. Stir well until fully mixed. Add 65g of chia seeds and stir thoroughly with a fork to ensure the seeds are evenly distributed. Leave the mixture to set for at least 4 hours or preferably overnight, stirring every couple of hours to prevent clumping and to help the pudding thicken evenly.
  2. Blend the Dragon Fruit: Peel and roughly chop half of the pink dragon fruit. Blend it until you achieve a smooth puree with no large chunks remaining.
  3. Combine Dragon Fruit with Chia Pudding: Stir the pureed dragon fruit into the prepared chia pudding gently but thoroughly to combine the flavors evenly throughout the pudding.
  4. Blend the Mango: Peel and roughly dice the Alphonso mango. Blend it until you get a smooth, creamy mango puree without any fibrous pieces.
  5. Assemble the Parfait: In serving cups or jars, layer the dragon fruit chia pudding with the mango puree. If using, add a layer of vanilla coconut yogurt between or on top to enhance creaminess. Finish by sprinkling chopped mango pieces on the top for a fresh and colorful presentation.
