Ingredients

Scale

Cake

  • 1 box White Cake Mix (15.25 oz)
  • a few drops Green Food Dye

Lime Jell-O Mixture

  • 1 pack Lime Jell-O (3 oz)
  • 1 cup Boiling Water
  • 1 cup Cold Water

Topping

  • 1.5 cups Heavy Whipping Cream
  • 1 package Cream Cheese (8 oz), softened
  • 1 cup Powdered Sugar
  • 1 pinch Salt
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prepare the Cake: Make the white cake mix according to the box instructions. Add a few drops of green food dye to the batter and mix well, then pour the batter into a greased 7×11-inch baking dish. Bake until golden and a toothpick inserted comes out clean.
  2. Cool and Poke Holes: Let the cake cool on the counter for about 15 minutes. Using the handle of a wooden spoon or skewer, poke holes about ½ to 1 inch apart all over the cake to allow the Jell-O to seep in.
  3. Prepare the Lime Jell-O: In a mixing bowl, dissolve the lime Jell-O powder in 1 cup of boiling water, stirring until fully dissolved. Stir in 1 cup of cold water to cool down the mixture.
  4. Pour Jell-O Over Cake: Slowly and carefully pour the lime Jell-O mixture evenly over the cooled cake, ensuring the liquid seeps into all the holes and the entire cake is saturated.
  5. Chill to Set: Refrigerate the cake for 3 to 4 hours so the Jell-O sets and the lime flavor infuses the cake thoroughly.
  6. Whip the Cream: Using a mixer, whip 1.5 cups of heavy whipping cream until stiff peaks form.
  7. Prepare Cream Cheese Topping: In a separate bowl, blend the softened cream cheese, powdered sugar, salt, and vanilla extract until smooth and creamy.
  8. Combine Toppings: Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
  9. Top the Cake: Spread the lime cream cheese whipped topping evenly over the chilled Jell-O cake before serving.

Notes

  • Ensure the cake is completely cool before poking holes and adding Jell-O to avoid melting the gelatin.
  • Use room temperature cream cheese to prevent lumps in the topping.
  • The green food dye is optional but enhances the festive St. Patrick’s Day appearance.
  • For firmer Jell-O infusion, chill the cake overnight.
  • This cake is best served cold from the refrigerator.
