Ingredients

Scale

Fritters

  • 1 lb ground lamb
  • 1 cup canned chickpeas, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 egg, beaten
  • 1/4 cup all-purpose flour
  • Vegetable oil, for frying

Wraps and Assembly

  • 4 large wraps or flatbreads
  • Fresh lettuce leaves
  • Thinly sliced cucumber
  • Yogurt sauce or tzatziki, for serving

Instructions

  1. Prepare the fritter mixture: In a food processor, pulse the chickpeas until coarsely ground but not pureed. In a mixing bowl, combine the ground lamb, processed chickpeas, finely chopped onion, garlic, cumin, coriander, smoked paprika, cayenne, salt, pepper, parsley, beaten egg, and flour. Mix thoroughly until well combined and sticky enough to hold together.
  2. Form the fritters: With wet hands, shape the mixture into small round patties, about 2 inches in diameter and 1/2 inch thick, laying them on a plate as you go.
  3. Fry the fritters: Heat approximately 1/4 inch vegetable oil in a large skillet over medium heat. Once hot, carefully add the patties in batches, frying for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
  4. Warm the wraps: While frying the fritters, warm the wraps briefly in a dry pan or microwave until pliable.
  5. Assemble the wraps: Place a lettuce leaf on each wrap, add 2-3 lamb chickpea fritters, top with sliced cucumber, and drizzle with yogurt sauce or tzatziki. Roll up the wraps tightly and serve immediately.

Notes

  • You can add chopped mint or cilantro for extra freshness in the fritter mixture.
  • For a gluten-free version, substitute all-purpose flour with chickpea flour or a gluten-free blend.
  • Adjust spices to your preferred heat level by reducing or omitting cayenne pepper.
  • Leftover fritters can be stored in the fridge and reheated in a skillet for best texture.
