  • 1/2 teaspoon salt

  • 4 oz extra sharp cheddar cheese, shredded
  • 3 tablespoons water

Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together the almond flour, cheddar cheese powder if using, xanthan gum, and salt until well combined.
  2. Say cheese! Stir in the shredded extra sharp cheddar cheese, evenly distributing it through the dry mixture.
  3. Make dough: Add the water and stir continuously until a dough starts to form. It may appear dry initially, but begin kneading the mixture with your hands until it comes together into a pliable dough with a play-doh-like texture.
  4. Roll out dough: Place the dough between two sheets of parchment paper. Flatten it into a square or rectangle shape and use a rolling pin to roll it out to roughly the thickness of a dull pencil or a fork prong. Carefully peel off the top layer of parchment paper.
  5. Turn into Cheez-Its! Use a pizza cutter or knife to cut the dough into square pieces. To keep them from puffing excessively and to emulate the classic Cheez-It look, use a skewer or chopstick to poke a small hole in the center of each square.
  6. Bake: Preheat the oven to 250°F (120°C). Bake the crackers on a lined baking sheet for 20-25 minutes, removing them just before they begin to turn golden brown on the edges. The crackers will continue to crisp up and harden as they cool.
