  • Chopped cilantro, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350˚F to prepare for baking the casserole.
  2. Mix Egg Mixture: In a large bowl, whisk together the 12 eggs, heavy cream, 1/2 cup shredded cheddar cheese, salt, and black pepper until well combined. Pour this mixture evenly into a greased 9×13″ casserole dish.
  3. Add Cream Cheese and Jalapeños: Distribute the cubed cream cheese evenly throughout the egg mixture. Thinly slice or dice the jalapeños and sprinkle them over the top of the casserole evenly to infuse a spicy kick.
  4. Bake Initial Layer: Place the casserole in the oven and bake for 35 minutes, allowing the eggs to partially set and flavors to meld.
  5. Add Toppings and Finish Baking: After 35 minutes, remove the casserole from the oven. Sprinkle the remaining cheddar cheese and crispy crumbled bacon evenly over the top.
