Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Honey Glaze

  • 3 tablespoons hot honey

Toppings

  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh thyme leaves

Instructions

  1. Pat Dry and Season Chicken: Pat the chicken breasts dry thoroughly with a paper towel to ensure a good sear. Rub each chicken breast evenly with olive oil, then season with garlic powder, smoked paprika, salt, and black pepper.
  2. Preheat Skillet: Heat an oven-safe skillet over medium-high heat and add a small amount of olive oil to coat the pan.
  3. Sear Chicken: Place the chicken breasts in the hot skillet and sear for 3–4 minutes on each side, until they develop a golden-brown crust.
  4. Drizzle Hot Honey: Lower the heat to medium-low, drizzle 3 tablespoons of hot honey evenly over the chicken breasts, and spoon the honey over the chicken to baste. Let the honey bubble gently for 1–2 minutes to meld the flavors.
  5. Transfer to Oven: Move the skillet to a preheated oven at 375°F (190°C) carefully, and bake for 10–12 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
  6. Add Feta and Thyme: Remove the skillet from the oven and immediately sprinkle the crumbled feta cheese and fresh thyme leaves over the chicken breasts.
  7. Rest and Serve: Let the chicken rest for 5 minutes before serving to allow juices to redistribute and the flavors to meld perfectly.

Notes

  • Use an instant-read thermometer to check chicken doneness for safety and juiciness.
  • If you don’t have hot honey, you can make your own by mixing honey with a little cayenne pepper or hot sauce.
  • Substitute fresh oregano or basil for thyme if preferred.
  • Skillet must be oven-safe; cast iron or stainless steel pans work best.
  • Allow resting time after baking to keep chicken tender and flavorful.
