Snack Mix
- 8 cups Chocolate Chex cereal
- 1 cup powdered sugar
- ⅓ cup hot chocolate mix (with marshmallows, about 1½ packets)
Milk Chocolate Coating
- 2 cups milk chocolate chips
- 2 tablespoons coconut oil
White Chocolate Coating for Marshmallows
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
Marshmallows and Optional Add-ins
- 2 cups miniature marshmallows

- Prepare: Line a large sheet pan with a silicone liner or parchment paper and set aside. Also, set out a large 2-gallon freezer bag and a very large bowl for mixing.
- Measure Cereal: Pour the 8 cups of Chocolate Chex cereal into the large bowl and set it aside.
- Combine Powdered Ingredients: In a small bowl, mix together the hot chocolate mix and powdered sugar until well combined. Pour this mixture into the prepared freezer bag.
- Melt Milk Chocolate: In a medium microwave-safe bowl, combine the milk chocolate chips with 2 tablespoons of coconut oil. Microwave in 15-second bursts, stirring thoroughly between bursts, until the mixture is fully melted and smooth.
- Coat Cereal: Pour the melted milk chocolate mixture over the cereal in the large bowl. Gently stir to generously coat all the cereal pieces.
- Mix Cereal with Powdered Mix: Transfer the chocolate-coated cereal into the freezer bag containing the powdered sugar and hot cocoa mixture. Seal the bag without squeezing out the air and shake well to coat the cereal evenly. Pour the coated cereal back into a large serving bowl and set aside.
- Coat Marshmallows with White Chocolate: In a small microwave-safe bowl, melt the white chocolate chips with 1 tablespoon of coconut oil using 15-second microwave bursts, stirring between each until smooth. Stir the miniature marshmallows into the melted white chocolate until they are well coated.
- Set Marshmallows: Spread the white chocolate-coated marshmallows evenly on the prepared sheet pan. Refrigerate or freeze for about 10 minutes, or allow to stand at room temperature for 30 minutes until the white chocolate has fully set. Once set, gently break apart the marshmallows and add them to the serving bowl with the coated cereal.
