Instructions

  1. Prepare the dough: Roll out one refrigerated pie crust into a 12-inch circle. Cut into six rectangles approximately 3×4 inches each, rerolling scraps as needed. Repeat this process with the second pie crust. In a small bowl, whisk the large egg with 1 tablespoon of water to create an egg wash.
  2. Brush dough with egg wash: Lay half of the cut dough rectangles on a clean work surface and brush each piece generously with the prepared egg wash. This will help seal the tarts and give them a nice golden finish.
  3. Make the filling: In a small bowl, mix together the brown sugar, cinnamon, and flour until well combined. The flour helps keep the filling from becoming too runny during cooking.
