This Holiday Sugar Cookie Cheesecake combines the buttery, sweet flavors of sugar cookie dough with the creamy richness of classic cheesecake. It’s a festive dessert perfect for holiday celebrations, featuring a sugar cookie crust topped with a smooth, velvety cheesecake layer that bakes to perfection.

Ingredients

Scale

For the Sugar Cookie Crust

  • 2 cups sugar cookie dough (store-bought or homemade)

For the Cheesecake Layer

  • 16 oz (450g) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs

Instructions

  1. Prepare the Sugar Cookie Crust: Preheat your oven to 350°F (175°C). Press the sugar cookie dough evenly into the bottom of a greased 9-inch springform pan, creating a uniform crust layer.
  2. Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar, continuing to beat until fully incorporated. Add the eggs one at a time, mixing well after each addition to create a smooth batter.
  3. Assemble and Bake: Pour the cheesecake batter over the prepared sugar cookie crust, spreading it evenly. Bake in the preheated oven for about 40 to 45 minutes, or until the center is mostly set but still slightly jiggly.
  4. Cool and Chill: Remove the cheesecake from the oven and allow it to cool to room temperature. Then refrigerate for at least 4 hours or overnight to fully set and develop flavor before serving.

Notes

  • You can use store-bought sugar cookie dough for convenience or make your own from scratch.
  • To avoid cracking, do not overbake the cheesecake; the center should remain slightly jiggly when you take it out.
  • Allow the cheesecake to chill thoroughly for the best texture and flavor.
  • If desired, garnish with festive sprinkles or icing sugar before serving.
