Granola Ingredients

  • 3 cups rolled oats
  • 1/2 cup nuts of choice (e.g., walnuts, pecans, almonds)
  • 1 tablespoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut oil
  • 8 tablespoons maple syrup
  • 2 tablespoons unsulphured molasses
  • Splash of vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper or a silicone liner to ensure the granola doesn’t stick.
  2. Mix Ingredients: In a large mixing bowl, combine the rolled oats, nuts, ground cinnamon, ground ginger, ground cloves, and sea salt. In a separate small bowl or measuring cup, whisk together the melted coconut oil, maple syrup, molasses, and vanilla extract. Pour the wet mixture over the dry ingredients and stir thoroughly to coat all the oats and nuts evenly.
  3. Press and Bake: Transfer the mixed granola onto the prepared baking sheet. Use a spatula to press the granola into an even layer, keeping it packed together to help achieve clusters while baking. Bake in the preheated oven for 20 minutes until golden and fragrant.
  4. Cool and Store: Remove the baking sheet from the oven and allow the granola to cool completely for about 15 minutes on the pan. This cooling step helps the granola harden and form crunchy clusters. Once cooled, break the granola into desired pieces and store in an airtight jar or container to maintain freshness.

Notes

  • You can substitute the nuts with seeds if you prefer a nut-free version.
  • For crunchier clusters, press the granola firmly onto the baking sheet before baking.
  • Store in an airtight container at room temperature for up to two weeks.
  • This granola makes a great topping for yogurt, smoothie bowls, or can be eaten as a snack on its own.
  • Adjust the sweetness by changing the amount of maple syrup and molasses to taste.
