Ingredients

Scale

Meat and Oil

  • 1 pound lean ground beef
  • 1 tablespoon olive oil

Vegetables and Beans

  • 3 teaspoons minced garlic
  • ½ chopped head cabbage
  • 1 (28-ounce) can diced tomatoes
  • 2 stalks chopped celery
  • 2 medium peeled and chopped carrots
  • 1 (16-ounce) can kidney beans, drained

Liquids and Seasoning

  • 3 ½ cups beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the Beef: In a large pot, heat 1 tablespoon olive oil over medium heat. Add 1 pound lean ground beef and cook it until browned and no longer pink, breaking it apart as it cooks.
  2. Add Garlic and Seasoning: Stir in 3 teaspoons minced garlic along with salt and pepper to taste. Cook for about 30 seconds until the garlic is fragrant, being careful not to burn it.
  3. Add Vegetables and Liquids: To the pot, add ½ a chopped head of cabbage, 1 (28-ounce) can diced tomatoes, 2 stalks chopped celery, 2 medium peeled and chopped carrots, 1 (16-ounce) can drained kidney beans, 3 ½ cups beef broth, and 1 tablespoon Italian seasoning. Stir well to combine all ingredients evenly.
  4. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let the soup simmer gently for 1 hour, stirring occasionally, to meld the flavors and soften the vegetables.
  5. Serve: After simmering, taste and adjust seasoning with additional salt and pepper if needed. Optionally, garnish with fresh parsley before serving for a touch of color and freshness.

Notes

  • For a thicker soup, mash some of the kidney beans before adding them or cook uncovered during the last 15 minutes to reduce liquid.
  • Feel free to substitute ground turkey for a leaner option.
  • Leftovers can be refrigerated and reheat well, flavors improve over time.
  • Adding a squeeze of lemon juice or a splash of vinegar before serving can brighten the flavors.
