  • 2 tbsp Olive oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 tsp Fresh ginger, minced
  • 1/2 cup Bell peppers, diced
  • 1 tsp Italian seasoning (optional)
  • 1/4 tsp Red pepper flakes (optional)
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 lb Boneless skinless chicken breasts
  • 6 cups Chicken broth, reduced sodium
  • 1 cup Broccoli, cut into florets
  • 1 cup Cauliflower, cut into florets
  • 2 tbsp Lemon juice

Instructions

  1. Heat the olive oil: In a Dutch oven or large pot, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  2. Sauté aromatics: Add the diced onion, minced garlic, and fresh ginger. Cook for 3-4 minutes, stirring occasionally, until the onions are translucent and garlic is fragrant.
  3. Add peppers and seasonings: Stir in the diced bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper. Continue cooking for an additional 3 minutes to blend flavors.
  4. Simmer chicken and broth: Place the boneless, skinless chicken breasts into the pot and pour in 6 cups of reduced sodium chicken broth. Bring to a simmer and cook for 20 minutes until the chicken is cooked through.
  5. Shred the chicken: Remove the chicken breasts from the pot and shred them using two forks. Return shredded chicken to the soup.
  6. Add vegetables and cook: Add the broccoli and cauliflower florets to the pot and simmer for another 10 minutes until the vegetables are tender but still vibrant.
  7. Finish with lemon juice: Remove the pot from heat and stir in 2 tablespoons of fresh lemon juice to brighten the flavors before serving.

Notes

  • For a vegetarian version, replace chicken with firm tofu or mushrooms and use vegetable broth.
  • You can add other veggies like carrots or zucchini for more variety.
