  • 1 cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Cook Beef and Onions: In a skillet over medium heat, brown the ground beef with diced onions until the onions become translucent, about 5-7 minutes, stirring occasionally to break up the meat.
  3. Add Seasonings: Add the minced garlic, cumin, and chili powder to the beef mixture, sautéing for an additional minute until fragrant and well combined.
  4. Assemble Enchiladas: Spoon an even amount of the beef mixture onto each tortilla. Roll the tortillas tightly and place them seam-side down in a greased baking dish to prevent unraveling.
  5. Add Sauce and Cheese: Pour the enchilada sauce evenly over the rolled tortillas, making sure all are covered. Sprinkle the shredded cheese generously over the top.
