Vegetables and Fresh Ingredients
- 1.5 lb / 700 g / 17.5 oz fresh green beans, ends removed
- 8 oz / 225 g button mushrooms, sliced
- 1 onion, chopped (yellow or white)
Liquids and Dairy
- 3 cups / 700 ml / 24 fl oz broth (e.g., chicken broth or veggie broth)
- 3 tbsp butter, divided
- 1 can (10.5 oz / 300 g) cream of mushroom soup
- 1/3 cup / 75 g / 1.5 oz freshly shredded cheddar cheese
Seasonings and Toppings
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 tsp garlic powder
- 2 cups / 100 g / 3.5 oz French fried onion rings
- Prepare for baking. Preheat your oven to 350°F (180°C / gas mark 4). Grease a 2-quart casserole dish with 1 tablespoon of butter or use non-stick cooking spray to ensure the casserole doesn’t stick. Set the dish aside.
- Blanch green beans. Place the fresh green beans and broth in a medium-sized pot. Bring it to a boil over medium-high heat. Cook the beans for about 8 minutes until they are tender yet crisp. For softer beans, you may cook them for up to 12 minutes. Once done, drain the beans thoroughly.
- Sauté mushrooms and onions. While the beans are cooking, melt the remaining 2 tablespoons of butter in a large non-stick pan or skillet over medium heat. Add the sliced mushrooms and chopped onion, sautéing them for 4 to 5 minutes until they are just tender and fragrant. Remove the pan from heat and set aside.
- Assemble casserole. In a large mixing bowl, combine the drained green beans, sautéed mushrooms and onions, cream of mushroom soup, shredded cheddar cheese, garlic powder, salt, and black pepper. Mix everything thoroughly to ensure the flavors are evenly distributed. Pour the mixture into the prepared casserole dish and spread it out evenly. Finally, sprinkle the French fried onion rings on top to create a crispy topping.
- Bake. Place the casserole in the preheated oven and bake for 15 to 20 minutes. Bake until the dish is heated through, bubbly, and the onion topping is golden brown.
- Serve. Remove the casserole from the oven and let it cool for about 5 minutes to allow it to set. Serve warm and enjoy this comforting and flavorful dish.
Notes
- You can use either chicken broth or vegetable broth depending on your preference or dietary needs.
- For a vegetarian version, use vegetable broth and ensure the cream of mushroom soup is vegetarian-friendly.
- Feel free to use green beans from frozen if fresh are unavailable, but reduce blanching time accordingly.
- The French fried onion rings add crunch; you can substitute with homemade crispy onions if desired.
- Adjust seasoning to taste, especially salt and pepper, depending on the saltiness of your broth and cream soup.
- This casserole can be prepared a day ahead; assemble but bake just before serving.
