Ingredients

Scale

Potatoes

  • 4 large russet potatoes

Herb Oil Mixture

  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Optional Garnishes

  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the correct temperature for baking the potatoes evenly.
  2. Prepare the Potatoes: Thoroughly wash and scrub the russet potatoes to remove any dirt. Pat them dry with a towel and pierce each potato several times with a fork to allow steam to escape during baking.
  3. Bake Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes until tender when pierced with a fork, ensuring a soft interior.
  4. Cool & Scoop: Remove the potatoes and allow them to cool for 10-15 minutes until safe to handle. Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving about a 1/4 inch layer of potato to support the skins.
  5. Prepare Seasoning Mix: In a small bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, paprika, sea salt, and black pepper. Mix well to create a fragrant herb-infused oil.
  6. Brush the Potato Skins: Using a brush or spoon, evenly coat the insides of the hollowed potato skins with the herb oil mixture to infuse flavor and encourage crispiness.
  7. Roast the Potato Skins: Arrange the coated potato skins on a baking sheet, cut side facing up. Roast in the preheated oven for 15-20 minutes until the edges turn crisp and golden brown.
  8. Add Cheese (Optional): For a cheesy twist, sprinkle grated Parmesan cheese on the skins during the last 5 minutes of roasting to melt and brown slightly.
  9. Garnish & Serve: Remove from the oven and garnish with freshly chopped parsley if desired. Serve warm as a delicious snack or appetizer alongside your favorite dipping sauce.

Notes

  • For extra crispiness, bake the potato skins longer until edges are deeply golden.
  • You can use sweet potatoes as a flavorful alternative.
  • Feel free to add other herbs like oregano or basil for a different flavor profile.
  • To make this recipe vegan, omit the Parmesan cheese or substitute with a plant-based cheese.
  • Serve with sour cream, ranch dip, or your favorite dipping sauce for extra flavor.
  • Leftover scooped potato flesh can be used for mashed potatoes or potato pancakes.
