Dough
- 200g self-raising flour
- 170g Greek yogurt
Filling
- 4 tbsp cranberry sauce
- 100g brie, chopped into small pieces
- 8 tbsp leftover turkey, chopped into small pieces
- Make the Dough: In a large bowl, combine the self-raising flour and Greek yogurt with a spoon until a shaggy dough forms. Knead gently for 1 minute, then cover with plastic wrap and set aside while preparing filling ingredients.
- Prepare and Roll Dough: After preparing fillings, knead the dough again for 30 seconds until soft and bouncy. Divide it into 4 equal pieces. Roll each piece into a circular flatbread shape about just under 1cm thick.
- Add Fillings: Spoon cranberry sauce into the center of each dough circle, spreading gently but leaving space at the edges. Top with 4-6 pieces of brie and 2 tablespoons of chopped turkey.
- Seal the Flatbreads: Bring all corners of the dough circle into the center and pinch tightly to seal the filling inside, forming a parcel. Turn the parcel over and gently flatten it down.
- Roll Flatbreads Again: Carefully roll each sealed parcel flat again with a rolling pin. Avoid bursting the dough but small tears are okay.
- Cook the Flatbreads: Heat a dry pan on low to medium heat. Place flatbreads in the pan and dry fry each side for 3-6 minutes until golden brown and cooked through. Serve immediately and enjoy your festive treat!
