Ingredients

Scale

Vinaigrette

  • ¼ cup extra virgin olive oil (60 mL)
  • 2 Tbsp red wine vinegar (white wine vinegar can be used in a pinch, 30 mL)
  • 2 tsp Dijon mustard
  • 2 tsp poppy seeds
  • 2 tsp sesame seeds
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dill
  • ½ tsp salt
  • ¼ tsp ground black pepper

Salad

  • 1 15-oz can chickpeas (drained and rinsed, 425-g can)
  • 1 15-oz can white beans (drained and rinsed, 425-g can)
  • 1 cup finely diced celery (about 3 stalks)
  • 1 green bell pepper (finely diced)
  • 1 English cucumber (finely diced)
  • 4 Tbsp finely chopped chives
  • 1 8-oz package fresh mozzarella pearls (226 g)

Instructions

  1. Prepare Vinaigrette: In a medium bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, poppy seeds, sesame seeds, garlic powder, onion powder, dill, salt, and ground black pepper until fully combined and emulsified.
  2. Prepare Salad Ingredients: Drain and rinse the chickpeas and white beans thoroughly. Finely dice the celery, green bell pepper, and English cucumber. Chop the chives finely. Gather the fresh mozzarella pearls, ensuring they are drained of excess liquid.
  3. Assemble Salad: In a large mixing bowl, combine the chickpeas, white beans, diced vegetables, chives, and mozzarella pearls. Pour the vinaigrette over the salad and toss gently but thoroughly to evenly coat all components with the dressing.
  4. Serve: Serve the salad immediately fresh, or cover and chill in the refrigerator for up to 2 hours for a colder option. Toss gently before serving to redistribute the dressing.

Notes

  • For best flavor, allow the salad to chill for at least 30 minutes to let the vinaigrette marinate with the beans and vegetables.
  • This salad can be stored in an airtight container in the refrigerator for up to 3 days.
  • Feel free to substitute fresh mozzarella pearls with cubed fresh mozzarella if unavailable.
  • To make this salad vegan, omit the mozzarella or use a plant-based cheese alternative.
  • Ensure beans are well drained to avoid a soggy salad.
