Ingredients

Scale

Strawberry Mousse

  • 12½ ounces strawberries (3/4 pound), cleaned and sliced
  • ½ cup granulated sugar
  • 1 cup cold heavy cream (with at least 30% fat content)
  • Extra strawberries for topping

Instructions

  1. Prepare Strawberry Puree: Clean and slice the strawberries. Place the sliced strawberries and granulated sugar into a blender or food processor and puree until smooth. Remove ½ cup of this puree and set it aside for layering.
  2. Whip the Cream: In a cold bowl, whip the cold heavy cream until stiff peaks form. Be careful not to overbeat.
  3. Combine Puree and Cream: Gently fold the remaining strawberry puree (excluding the ½ cup set aside) into the whipped cream, taking care to maintain the airy texture of the mousse.
  4. Assemble the Mousse: Divide the reserved ½ cup of strawberry puree evenly between 4 small to medium glasses (each glass approximately 1 cup in volume). Spoon the strawberry mousse over the puree in each glass.
  5. Chill and Serve: Refrigerate the assembled mousse for at least 1 hour or overnight to allow it to set and flavors to meld. Before serving, top with fresh sliced strawberries. Enjoy your fresh strawberry mousse!

Notes

  • Use cold cream and a chilled bowl to achieve the best whipped cream consistency.
  • For a smoother mousse, strain the strawberry puree before folding into the cream.
  • The mousse can be prepared a day in advance and refrigerated overnight for convenience.
  • Glasses hold approximately 1 cup capacity each – adjust servings accordingly.
  • Fresh strawberries on top add a lovely texture and presentation boost.
