Ingredients

Scale

For the Chicken and Green Beans

  • 1 tablespoon vegetable oil (divided)
  • 1 teaspoon vegetable oil (divided)
  • 2 1/2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 teaspoons minced garlic
  • Salt and pepper, to taste

For the Sauce

  • 1/4 cup low-sodium chicken broth (or water)
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • 1 tablespoon cold water

Instructions

  1. Cook the Green Beans: Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the green beans and cook for about 3-4 minutes, or until tender but still crisp. Remove the green beans from the pan and place them on a plate; cover to keep warm.
  2. Cook the Chicken: Wipe the pan clean with a paper towel and increase the heat to high. Add the remaining tablespoon of vegetable oil. Season the chicken pieces with salt and pepper and add them in a single layer to the pan, cooking in batches if necessary to avoid overcrowding. Cook each piece for 3-4 minutes per side until golden brown and cooked through. Add the minced garlic to the pan and cook for an additional 30 seconds until fragrant.
  3. Combine Chicken and Green Beans: Return the cooked green beans to the pan with the chicken. Cook together for 2 more minutes, stirring occasionally, to warm the green beans through and mix flavors.
  4. Prepare the Sauce: In a bowl, whisk together the chicken broth, soy sauce, and honey until combined. In a separate small bowl, stir the cornstarch with a tablespoon of cold water until smooth, making a slurry.
  5. Finish the Dish: Pour the soy sauce mixture into the pan with the chicken and green beans. Stir well, then add the cornstarch slurry and cook for 1-2 minutes, stirring continuously, until the sauce thickens and coats the chicken and vegetables evenly. Serve hot.

Notes

  • Cook chicken in batches if your pan is small to ensure even browning.
  • Adjust the honey quantity to your desired sweetness level.
  • For a gluten-free version, substitute soy sauce with tamari.
  • This recipe can be served with steamed rice or noodles for a complete meal.
  • Use fresh garlic for the best flavor, but garlic powder can be a substitute in a pinch.
