Ingredients

Scale

Meat and Dairy

  • 1 pound ground sausage
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk

Vegetables

  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained

Dry Ingredients and Spices

  • 2 cups biscuit mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the sausage balls evenly.
  2. Mix Ingredients: In a large mixing bowl, combine the ground sausage, shredded cheddar cheese, drained Rotel diced tomatoes and green chilies, biscuit mix, milk, garlic powder, and onion powder. Mix gently until just combined to keep the mixture light and cohesive.
  3. Form Balls: Use a cookie scoop or tablespoon to portion out the mixture. Roll each portion into 1-inch balls and place them on a baking sheet lined with parchment paper, spacing them about an inch apart to allow even baking.
  4. Bake: Place the baking sheet in the preheated oven and bake the sausage balls for 20-25 minutes, or until they are golden brown on the outside and cooked through in the center.
  5. Cool and Serve: Remove the sausage balls from the oven and let them cool for a few minutes before serving. This helps them set and makes them easier to handle.

Notes

  • Make sure to drain the Rotel tomatoes before mixing to prevent the sausage balls from becoming too wet.
  • You can substitute the ground sausage with ground beef or turkey if preferred.
  • For extra spice, add a pinch of cayenne pepper or chili powder to the mixture.
  • These sausage balls can be prepared ahead of time and frozen before baking; bake them straight from the freezer adding a few extra minutes to the baking time.
  • Serve warm with your favorite dipping sauce such as ranch or spicy mustard.
