  • 4 tablespoons butter, divided
  • 8 small (4 inch) hoagie rolls or 4 large (68 inch) rolls

  • 4 ounces provolone cheese, sliced (optional)

Instructions

  1. Prepare the chuck roast: Place the chuck roast in the bottom of the slow cooker. Season all sides evenly with the onion soup mix, minced garlic, and dried thyme to infuse the meat with flavor.
  2. Add liquids and butter: Pour the Worcestershire sauce and condensed French onion soup over the top of the roast. Cut one tablespoon of butter into two pats and place them on top of the roast. Cover the slow cooker with the lid.
  3. Cook slowly: Cook the roast on high for 6-8 hours or on low for 8-10 hours, until the meat is tender and easily shreddable.
  4. Shred the roast: Carefully remove the cooked roast from the slow cooker. Shred the meat with two forks, discarding any excess fat or connective tissues for a lean filling.
  5. Prepare the au jus: Drain the fat from the cooking juices in the slow cooker and transfer the au jus into one or more bowls for dipping the sandwiches.
  6. Toast the rolls: Melt the remaining 3 tablespoons of butter. Cut each hoagie roll in half and brush the cut sides with butter. Place the rolls on a baking sheet cut side up under the broiler for 2-4 minutes, or until the edges are golden and toasted.
