Ingredients

Scale

Meat and Cheese

  • 1 lb beef steak, thinly sliced
  • 8 oz provolone cheese, sliced

Vegetables

  • 1 large onion, sliced
  • 1 large bell pepper (red, green, or yellow), sliced

Other Ingredients

  • 12 oz cheese tortellini (fresh or frozen)
  • 2 cups beef broth

Instructions

  1. Prepare Ingredients: Thinly slice the beef steak, onion, and bell pepper. If using frozen tortellini, no need to thaw.
  2. Add to Crock Pot: Place beef steak, cheese tortellini, sliced onion, bell pepper, and beef broth into the slow cooker. Stir gently to combine.
  3. Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours until the beef is tender and the tortellini is cooked through.
  4. Add Cheese: During the last 15 minutes of cooking, layer the sliced provolone cheese on top of the casserole. Cover again to allow the cheese to melt.
  5. Serve: Once the cheese is melted and bubbly, serve hot directly from the crock pot for a hearty and cheesy meal.

Notes

  • You can use any type of bell pepper based on your preference or what’s available.
  • Beef broth adds rich flavor, but you can substitute with vegetable broth if preferred.
  • If you prefer a thicker sauce, stir in a slurry of cornstarch and water about 30 minutes before cooking is done.
  • For extra spice, add sliced jalapeños or a dash of hot sauce before cooking.
