Ingredients

Scale

Cake Layers

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk

Blue Frosting

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 23 tablespoons milk
  • 2 teaspoons vanilla extract
  • Blue gel food coloring, to desired shade

Decoration

  • 1012 chocolate sandwich cookies (e.g., Oreos)

Instructions

  1. Prepare Cake Layers: Preheat the oven to 350°F (177°C). Grease and flour three 8-inch round cake pans. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla extract. Alternately add flour mixture and milk, beginning and ending with flour, mixing until just combined.
  2. Bake Cake Layers: Divide batter evenly among prepared pans and smooth tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  3. Make Blue Frosting: Beat butter until creamy. Gradually add powdered sugar, alternating with milk, beating until smooth and fluffy. Mix in vanilla extract and blue gel food coloring until the desired shade of blue is achieved.
  4. Assemble the Cake: Place one cake layer on a serving plate. Spread a generous layer of blue frosting on top. Repeat with the second layer. Top with the third cake layer. Frost the entire cake with the remaining blue frosting evenly.
  5. Decorate with Cookies: Press chocolate sandwich cookies around the sides and on top of the cake to decorate and resemble Cookie Monster’s face. Arrange them creatively for full effect.

Notes

  • Ensure cakes are completely cooled before frosting to avoid melting the frosting.
  • You can adjust the amount of blue food coloring depending on how vibrant you want the frosting.
  • Use gluten-free flour if gluten-free cake is needed.
  • For a fun twist, add chocolate chips inside the cake batter.
  • Store leftover cake in an airtight container in the refrigerator for up to 3 days.
