Coffee Cake

  • ½ cup butter (softened)
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ⅔ cup sour cream
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 350˚F (175˚C) to ensure it’s ready for baking the cake.
  2. Make the Cinnamon Crumble: In a medium bowl, combine the melted butter, 1½ cups flour, brown sugar, cinnamon, and nutmeg. Use a fork to mix everything together until it forms a crumbly texture with evenly distributed spices.
  3. Prepare the Coffee Cake Batter: In a large bowl, beat the softened butter and white sugar with a hand mixer or wooden spoon until the mixture is light and fluffy. Add the eggs one at a time and mix well. Stir in the vanilla extract followed by folding in the sour cream gently.
  4. Combine Dry Ingredients: In a separate small bowl, whisk together the 1 cup flour, cinnamon, baking powder, and salt. Gradually add this to the butter mixture and stir just until combined and moistened, careful not to overmix to keep the cake tender.
