Instructions

  1. Prepare Pan and Preheat Oven: Line a 13×9-inch baking pan with aluminum foil and spray it with cooking spray to prevent sticking. Preheat your oven to 350°F (175°C).
  2. Mix Dry and Wet Ingredients: In a large bowl, combine the melted butter, brown sugar, baking soda, and salt. Mix on low speed with an electric mixer until smooth and well combined. Gradually add the all-purpose flour and quick-cooking oats, mixing thoroughly until you achieve a consistent oat mixture.
  3. Reserve Oat Mixture: Set aside 1 heaping cup of the oat mixture in a separate bowl; this will be used later as a topping.
  4. Form and Bake Crust: Press the remaining oat mixture firmly into the bottom of the prepared pan to form an even crust. Bake this crust at 350°F for 10 minutes to partially cook it.
  5. Prepare Peanut Butter Fudge Layer: In a separate bowl, combine the creamy peanut butter and sweetened condensed milk. Mix until the mixture is smooth and creamy.
  6. Add Fudge Layer and Toppings: Pour the peanut butter fudge mixture evenly over the warm oat crust. Then, crumble half of the reserved oat mixture evenly over this layer. Sprinkle the semi-sweet chocolate chips on top, and finish by adding the remaining oat mixture as the final crumble topping.
