Instructions

  1. Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken breasts for 6 to 7 minutes per side or until fully cooked and no longer pink inside. Remove the chicken from the skillet and let it rest for a few minutes before slicing thinly.

  3. Prepare the Bread: Spread mayonnaise evenly on one side of each bread slice, then spread Dijon mustard over the mayonnaise to add a tangy kick.
  4. Assemble the Sandwiches: On two bread slices with the mayo and mustard side up, layer the sliced chicken, avocado slices, cheese, thinly sliced red onion, and tomato slices. Top each with the remaining bread slices, mayo side down, to complete the sandwich.
  5. Grill the Sandwiches: Heat butter or olive oil in a skillet over medium heat. Place the assembled sandwiches in the skillet and grill for 3 to 4 minutes on each side.
