Ingredients

Scale

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 large eggs, room temperature
  • 2 tablespoons all-purpose flour

For the Caramel Swirl:

  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks during baking.
  2. Make the Crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove and let it cool.
  3. Beat Cream Cheese: Using a mixer, beat the softened cream cheese until smooth and creamy to ensure no lumps remain.
  4. Add Sugar and Mix: Gradually add sugar to the cream cheese and mix until combined well and fluffy.
  5. Add Sour Cream, Vanilla, and Flour: Stir in sour cream, vanilla extract, and all-purpose flour until the mixture is smooth and uniform.
  6. Incorporate Eggs: Add eggs one at a time, mixing on low speed just until each egg is incorporated to avoid overmixing.
  7. Assemble Cheesecake with Caramel: Pour half of the cheesecake batter over the cooled crust. Drizzle half of the caramel sauce evenly over the batter.
  8. Add Remaining Batter and Caramel Swirl: Spoon the remaining cheesecake batter over the caramel. Drizzle the rest of the caramel on top and gently swirl it using a knife to create a marbled effect.
  9. Bake: Bake in the preheated oven for 55 to 65 minutes until the edges are set and the center slightly jiggles when shaken.
  10. Cool Slowly: Turn off the oven and leave the cheesecake inside with the door cracked open for 1 hour to cool gradually and prevent cracks.
  11. Refrigerate: After cooling, refrigerate the cheesecake for at least 4 hours or overnight to allow it to set completely before serving.

Notes

  • Use room-temperature ingredients to achieve the creamiest texture.
  • For extra protection against cracks, consider baking the cheesecake in a water bath.
  • For a dramatic finish, drizzle additional caramel sauce over the cheesecake just before serving.
  • Store any leftovers refrigerated for up to 5 days or freeze for up to 2 months.
