For the Dough

  • 3/4 cup warm water (around 110 degrees)
  • 1 teaspoon sugar
  • 2 1/4 teaspoons active dry yeast
  • 2 cups flour (all-purpose or bread flour)
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt

For the Toppings

  • 4 ounces cream cheese (room temperature)
  • 1 teaspoon ranch seasoning mix
  • 1 cup chopped cooked chicken
  • 1/2 cup buffalo sauce
  • 8 ounces mozzarella (shredded)
  • 1 tablespoon chopped green onions
  • Ranch dressing or blue cheese for serving (optional)

Instructions

  1. Bloom the yeast: In the bowl of a stand mixer, combine warm water and sugar, then sprinkle the yeast on top. Let it sit for about 10 minutes until frothy to activate the yeast.
  2. Make the dough: Add flour, olive oil, and salt to the yeast mixture. Using the dough hook attachment on medium speed, knead until it forms a smooth dough. Add more flour by tablespoons if it’s too sticky. Transfer the dough to an oiled bowl.
  3. First rise: Place the bowl in a warm spot, like an oven with the light on, and let the dough rise for 1 hour or until doubled in size.
  4. Preheat oven: About 30 minutes after starting the rise, set your oven to 500°F (260°C) to preheat.
  5. Punch down dough: Once the dough has doubled, gently punch it down to release air pockets.
  6. Shape crust: On a floured surface, roll the dough into a 12-inch circle. Transfer it to a pizza stone or pan.
  7. Prepare cream cheese mixture: Microwave cream cheese until very soft and melty, then stir in ranch seasoning until combined evenly.
  8. Spread base: Evenly spread the ranch cream cheese mixture over the rolled-out dough.
  9. Add cheese and chicken: Sprinkle all but 1/4 cup of shredded mozzarella over the cream cheese. Toss the chopped chicken with buffalo sauce, then evenly distribute the chicken on top of the cheese.
  10. Top with remaining cheese: Sprinkle the remaining 1/4 cup mozzarella over the chicken for a cheesy finish.
  11. Bake: Bake the pizza at 500°F for about 10 minutes, or until the crust is golden and the cheese is melted and bubbly.
  12. Garnish and serve: Remove pizza from oven, sprinkle with chopped green onions, and drizzle ranch or blue cheese dressing over the top if desired. Slice and serve warm.

Notes

  • Make sure the warm water is not too hot as it can kill the yeast; around 110°F is ideal.
  • If you don’t have a pizza stone, a baking sheet will work as well.
  • You can substitute ranch seasoning with blue cheese crumbles if preferred.
