For the Dough
- 3/4 cup warm water (around 110 degrees)
- 1 teaspoon sugar
- 2 1/4 teaspoons active dry yeast
- 2 cups flour (all-purpose or bread flour)

- 1 cup chopped cooked chicken

- Bloom the yeast: In the bowl of a stand mixer, combine warm water and sugar, then sprinkle the yeast on top. Let it sit for about 10 minutes until frothy to activate the yeast.
- Make the dough: Add flour, olive oil, and salt to the yeast mixture. Using the dough hook attachment on medium speed, knead until it forms a smooth dough. Add more flour by tablespoons if it’s too sticky. Transfer the dough to an oiled bowl.
- First rise: Place the bowl in a warm spot, like an oven with the light on, and let the dough rise for 1 hour or until doubled in size.
