Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Scramble the Eggs: Beat the eggs with salt and pepper until well combined. Heat the olive oil in a skillet over medium heat, then add the eggs. Scramble gently until the eggs are just set but still tender. Remove the pan from heat to avoid overcooking.
  3. Cook the Sausage: In the same or separate skillet, cook the ground sausage or sausage links over medium heat until browned and cooked through. If using links, slice them into bite-sized pieces after cooking.
  4. Assemble the Taquitos: Lay out the flour tortillas on a flat surface. Evenly distribute the scrambled eggs and cooked sausage onto each tortilla. Sprinkle shredded cheddar cheese over the filling. Roll each tortilla up tightly, then place them seam-side down on the prepared baking sheet to keep them secure during baking.
