Ingredients

Scale

Chicken

  • ½ pound boneless, skinless chicken breasts

Salad

  • 6 cups spring mix lettuce
  • 1 cup fresh blackberries
  • 1 medium avocado, sliced
  • ¼ cup red onion, sliced
  • ¼ cup chopped walnuts

Dressing

  • ½ cup fresh blackberries
  • 2 teaspoons Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Cook chicken: Heat a cast iron skillet over medium-high heat. Add the boneless, skinless chicken breasts and sauté until they are fully cooked through, about 5-7 minutes per side depending on thickness. Ensure chicken reaches an internal temperature of 165°F (74°C). Tent the cooked chicken with foil and let rest while preparing the salad.
  2. Assemble salad: In a large bowl, add the spring mix lettuce. Arrange fresh blackberries, sliced avocado, sliced red onion, and chopped walnuts evenly on top of the lettuce bed. Set aside.
  3. Make dressing: In a medium bowl, combine ½ cup fresh blackberries, Dijon mustard, balsamic vinegar, extra virgin olive oil, honey, and soy sauce. Use a fork to mash the blackberries to release their juices and whisk all ingredients until well blended. Season with salt and pepper to taste.
  4. Slice chicken, dress salad, and serve: Slice the rested chicken breasts into strips and place over the salad. Drizzle the salad with the prepared blackberry balsamic dressing. Serve immediately to enjoy the fresh and vibrant flavors.

Notes

  • For a nuttier flavor, consider toasting the walnuts before adding them to the salad.
  • Use fresh blackberries for the best flavor; frozen blackberries can be used but may alter the dressing consistency.
  • If you prefer a milder dressing, reduce the amount of balsamic vinegar slightly.
  • This salad is best served immediately to keep the greens crisp and the avocado fresh.
  • Can substitute spring mix with baby spinach or arugula depending on preference.
