These BBQ Chicken Nachos are a deliciously easy appetizer or game day snack featuring crispy tortilla chips topped with smoky BBQ chicken, melted cheddar cheese, black beans, corn, and a flavorful combination of BBQ sauce, cilantro, pico de gallo, guacamole, and sour cream.

Ingredients

Scale

Base

  • 16 ounces tortilla chips

Protein & Toppings

  • 2 cups diced BBQ chicken
  • 1 cup black beans (canned, drained and rinsed)
  • 1 cup corn (canned, drained)

Cheese

  • 8 ounces shredded cheddar cheese

Sauces & Garnishes

  • ¼ cup BBQ sauce
  • 2 tablespoons chopped cilantro
  • ¼ cup pico de gallo
  • ¼ cup guacamole
  • ¼ cup sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 400˚F (200˚C) to prepare for baking the nachos.
  2. Layer Nachos: Spread the tortilla chips evenly on a baking sheet. Sprinkle half of the shredded cheddar cheese over the chips, then distribute the diced BBQ chicken, black beans, and corn evenly over the cheese. Finally, top with the remaining cheddar cheese.
  3. Bake: Place the baking sheet in the preheated oven and bake for 8 to 12 minutes, or until the cheese has melted completely and the edges of the chips become golden and crispy.
  4. Add Toppings: Remove the nachos from the oven. Drizzle the BBQ sauce over the top, sprinkle with chopped cilantro, and add dollops of sour cream, guacamole, and pico de gallo in the center or on the side for dipping.

Notes

  • For extra heat, add sliced jalapeños or a dash of hot sauce before baking.
  • Use homemade BBQ chicken or store-bought for convenience.
  • To keep chips from getting soggy, arrange toppings evenly and avoid overly liquid BBQ sauce.
  • Serve immediately to enjoy crispy texture.
  • You can substitute cheddar cheese with a Mexican cheese blend for more flavor variety.
