Yogurt Mixture
- 2 cups Greek yogurt
- 4 large eggs
- 1/4 cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 3 tablespoons cornstarch
Fruit
- 1 1/2 cups berries (divided)
- Preheat and Prepare Baking Dish: Preheat your oven to 350 degrees F (175 degrees C) and line an 8×8 inch square baking dish with parchment paper to prevent sticking.
- Mix Ingredients: In a large bowl, whisk together Greek yogurt, eggs, maple syrup, and vanilla extract until smooth and uniform. Gradually add the cornstarch and whisk again until fully incorporated.
- Add Berries and Transfer Mixture: Fold in 1 cup of the berries gently into the yogurt mixture. Pour this batter into the prepared baking dish, then sprinkle the remaining 1/2 cup of berries evenly on top.
- Bake: Place the dish in the preheated oven and bake for about 45 minutes, or until the center of the yogurt custard is set and no longer jiggly.
- Cool and Serve: Remove the baked yogurt from the oven and let it cool almost completely. Cut into 9 slices and serve as is or drizzle with additional maple syrup if desired.
Notes
- Ensure the yogurt is thick Greek yogurt for best texture; regular yogurt may result in a looser set.
- Use fresh or frozen berries; if frozen, thaw and drain excess liquid to prevent sogginess.
- You can substitute maple syrup with honey or agave nectar depending on preference.
- Letting the baked yogurt cool completely helps it firm up further for better slicing.
- Store leftovers covered in the refrigerator for up to 3 days.
