Ingredients

Scale

Salmon

  • 4 fillets salmon (6 oz each)
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning (Adjust to spice preference)
  • Salt to taste
  • Black pepper to taste

Avocado Lime Sauce

  • 1 ripe avocado
  • 1 lime, juiced
  • 1/4 cup Greek yogurt (Or sour cream)
  • 1 clove garlic, minced
  • 1 tablespoon fresh cilantro, chopped (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the salmon.
  2. Prepare Baking Sheet: Line a baking sheet with parchment paper to ensure easy cleanup after baking.
  3. Make Cajun Oil Mixture: In a mixing bowl, combine olive oil, Cajun seasoning, salt, and black pepper. Stir until well blended to coat the salmon evenly.
  4. Season Salmon: Place salmon fillets on the prepared baking sheet and brush both sides with the Cajun oil mixture, ensuring full coverage.
  5. Bake Salmon: Bake the salmon in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Prepare Avocado Lime Sauce: While the salmon is baking, mash the ripe avocado in a bowl until smooth. Add lime juice, Greek yogurt, minced garlic, salt, and pepper, then whisk together until creamy and well combined.
  7. Rest Salmon: Once baked, remove the salmon from the oven and let it rest for a few minutes to retain its moisture.
  8. Serve: Plate the salmon fillets and drizzle generously with the avocado lime sauce. Garnish with chopped cilantro if desired.

Notes

  • Adjust the amount of Cajun seasoning based on your preferred spice level.
  • The Greek yogurt in the sauce can be substituted with sour cream for a different flavor.
  • Make sure not to overbake the salmon to keep it moist and tender.
  • The sauce can be prepared a few hours ahead and refrigerated to allow flavors to meld better.
  • Use fresh lime juice for the best tangy flavor in the sauce.
