Egg Mixture
- 18 eggs
- 2 cups cottage cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons chives (optional)
Bacon & Assemblies
- 12 slices bacon
- 12 slices cheese (such as cheddar or American)
- 12 bagels
- oil spray (cooking spray)
- Preheat Oven: Heat the oven to 350°F (175°C) to prepare for baking the bacon and egg mixture.
- Bake Bacon: Line a sheet pan with foil or parchment paper and place the bacon slices on it in a zigzag ‘N’ shape. Bake for 30 to 40 minutes, flipping the bacon halfway through to ensure even cooking. Remove and set aside to cool.
- Prepare Egg Mixture Pan: While bacon bakes, spray another parchment-lined sheet pan generously with cooking spray to prevent sticking.
- Blend Egg Mixture: In a blender, combine eggs, cottage cheese, garlic powder, onion powder, salt, and pepper. Blend until smooth and pour carefully into the prepared sheet pan.
- Add Chives and Bake Eggs: Evenly sprinkle chives over the egg mixture if using. Bake in the oven for 15 to 20 minutes, or until the eggs are fully set in the center. Remove and let cool for a few minutes.
- Cut Egg Frittata: Once cooled slightly, cut the baked egg mixture into 12 equal slices to match bagel servings.
- Assemble Sandwiches: Slice bagels in half horizontally. Top the bottom halves with a slice of the cottage cheese egg mixture, a slice of cheese, and bacon. Place the top halves of the bagels on and serve immediately or store in the refrigerator for later enjoyment.
Notes
- You can use any cheese of your choice such as cheddar, American, or Swiss for the sandwich.
- For crispier bacon, bake closer to 40 minutes; reduce time for chewier bacon.
- Make sure to spray the pan liberally with oil spray or use parchment paper to prevent the egg mixture from sticking.
- These sandwiches store well in the fridge and can be reheated in a toaster oven or microwave.
- Chives are optional but add a nice fresh flavor and color contrast.
