Salmon and Marinade

  • 2 x 180g / 6oz skinless salmon fillets
  • 1 tsp fresh ginger, finely grated
  • 1 garlic clove, crushed
  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp sweet chili sauce

To Cook and Serve

  • Oil spray (olive oil, canola oil, etc.)
  • Sesame seeds, for garnish
  • Scallions/shallots, finely sliced, for garnish
  • Steamed Asian greens, to serve
  • Rice, to serve

Instructions

  1. Marinate the Salmon: In a shallow bowl, combine the ginger, garlic, soy sauce, oyster sauce, and sweet chili sauce to create the marinade. Add the salmon fillets and turn them to coat thoroughly. Cover and refrigerate to marinate for at least 30 minutes or up to overnight for deeper flavor infusion.
  2. Preheat the Grill or Broiler: Set your grill or broiler to high heat and position the rack about 25 cm (10 inches) from the heat source to ensure even cooking and caramelization.
  3. Glaze the Salmon: Place the marinated salmon fillets on a baking tray without oil or parchment paper, as these can burn. Dab the excess marinade glaze onto the salmon, but avoid pouring excess glaze on the tray to prevent burning during cooking.
  4. Grill the Salmon: Grill or broil the salmon for 7 minutes. Then, remove and generously spray the surface with oil to promote caramelization. Return to the grill for another 1 to 3 minutes until the surface is caramelized and the salmon is cooked through. The flesh should flake easily, and for medium rare, an internal temperature of 50°C (122°F) is ideal. Avoid overcooking to keep the salmon moist and tender.
  5. Serve: Transfer the salmon to plates and sprinkle with sesame seeds and sliced scallions or shallots. Serve alongside steamed Asian greens and rice for a balanced, flavorful meal.
