Ingredients

Scale

Apple Filling

  • 5 medium Granny Smith apples, peeled, cored, and finely diced (about 3½ cups)
  • ¼ cup (50 g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon cornstarch

Egg Rolls

  • 2224 egg roll wrappers
  • 8 ounces cream cheese, room temperature (about 2 teaspoons per egg roll)
  • cooking oil or cooking spray, for brushing

Topping

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup caramel topping, warmed, for dipping

Instructions

  1. Prepare the filling: In a medium bowl, combine the peeled, cored, and finely diced Granny Smith apples with light brown sugar, ground cinnamon, and cornstarch. Mix well until thoroughly combined and set aside.
  2. Preheat the oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Assemble the egg rolls: On a clean work surface, lay out an egg roll wrapper. Spread about 2 teaspoons of softened cream cheese in the center, then top with approximately 2 tablespoons of the apple mixture.
  4. Roll the egg rolls: Wet the edges of the wrapper with water. Fold up the bottom corner over the filling and roll once to enclose partially. Fold in the right and left corners towards the center, pressing gently to seal, then continue rolling tightly until fully wrapped. Press edges to seal securely, using additional water if necessary.
  5. Prepare for baking: Place the rolled egg rolls seam-side down on the prepared baking sheet. Brush or spray each one lightly with cooking oil.
  6. Bake: Bake the egg rolls in the preheated oven for 15-17 minutes, flipping halfway through until they are golden brown and crispy.
  7. Make the topping: While egg rolls bake, mix granulated sugar and cinnamon in a shallow dish.
  8. Coat the egg rolls: Once baked, immediately roll each egg roll in the cinnamon sugar mixture, ensuring a full coating.
  9. Serve: Serve warm with warmed caramel sauce on the side for dipping or drizzling over the egg rolls.

Notes

  • Use Granny Smith apples for a tart flavor that balances the sweetness.
  • For extra crispiness, brush egg rolls with oil before baking.
  • You can make egg rolls ahead and freeze them; bake directly from frozen, adding a few extra minutes to cooking time.
  • Substitute caramel sauce with vanilla ice cream for serving if preferred.
  • Handle the wrappers gently to prevent tearing during rolling.
