Instructions

  1. Prepare the vegetables: Roughly chop the butternut squash, sweet potato, and red pepper. Cut the red onions into 8 wedges each. Gather the Jersey Royals or baby potatoes and lightly bash the garlic cloves to release their flavor.
  2. Combine and coat: Place all the prepared vegetables along with thyme sprigs into the air fryer basket. Drizzle with 1 tablespoon of olive oil and shake the basket well to evenly coat all the pieces with oil and thyme.
  3. First roasting phase: Set the air fryer temperature to 200°C (392°F) and roast the vegetables for 20 minutes. This initial cook softens the denser veggies and starts caramelizing the sugars.
  4. Shake to redistribute: After 20 minutes, shake the air fryer basket again to turn and redistribute the vegetables, ensuring even cooking and browning on all sides.
  5. Final roasting phase: Continue roasting for an additional 10 to 20 minutes at 200°C until all the vegetables are cooked through, tender, and lightly caramelized. The exact time depends on the size of the pieces and your preferred level of doneness.
  6. Serve: Once done, remove the roasted vegetables from the air fryer and serve warm as a flavorful and nutritious side dish.
